SILVER NEEDLE
Silver Needle, or Baihao Yinzhen, is a white tea produced in Fujian Province in China. This is the best of the white teas and the most expensive variety as only top buds of the plant are hand picked to be used to produce the tea. The buds are only lightly oxidised before drying which results in a tea with the least caffeine and the most antioxidants.
Infusing the tea results in a light coloured, refreshing and delicately flavoured liquor unlike any other.
Storage - store in an airtight container in a cool, dry place out of direct sunlight
Infusion - the leaves need to be infused at around 80°C for 4 to 5 minutes
