WHAT IS WHITE TEA

White tea has the lowest caffeine and the most antioxidants. The tea buds are picked by hand before they are allowed to open and while they still have their white downy ‘hair’. The buds are carefully sorted so that only perfect and undamaged buds, and first very young leaves, are used. These are laid out in the sun to wilt and dry. The process allows for no oxidation at all and the liquor produced is delicate and light.
